Bulgur Pilav with Peppers & Tomatoes
With Fresh & Simple Ingredients!
Coarse bulgur Tomato, 1 cup, diced Green pepper, 1 large, diced Onion, 1 medium, diced Chickpeas Garlic, 2 cloves, minced
Rinse the vegetables well and then dice the tomato and green bell pepper. Peel the onion and dice. Peel and mince the garlic .
Start by sautéing the onions and garlic. Once soft, add in the peppers, bulgur and salt. Stir for 2 minutes.
Add in the tomato paste and broth. After bringing to a light boil, add in the chopped tomatoes and 1/2 cup of chickpeas. Cover and cook over low heat for 10 more minutes.
After absorbing all of the veggie broth, the bulgur will bulk up nicely. Use a fork to gently fluff and combine the grains and diced vegetables.
